  • 2 tablespoons cornstarch Helps thicken the custard.
Assembly Ingredients
  • 1 box vanilla wafers Get a good quality brand.
  • 4 large ripe bananas Use ripe but not mushy bananas.

Preparation
  1. In a medium saucepan, whisk together the eggs, sugar, and cornstarch.
  2. Gradually add the milk while continuing to whisk to combine.
  3. Cook over medium heat, stirring constantly until the mixture thickens and is glossy.
Assembly
  1. Layer the vanilla wafers at the bottom of your dish.
  2. Add a layer of sliced bananas on top of the wafers.
  3. Pour the thickened custard over the banana and wafer layers.
  4. Allow it to cool completely, then refrigerate for several hours or overnight for flavors to meld.

Notes

For an extra smooth custard, strain it through a fine mesh sieve before assembling. Don’t double the bananas if making a double batch; it can overpower the vanilla flavor. Serve chilled with a dollop of whipped cream or a sprinkle of cinnamon on top!
