Ingredients
  

For the Pineapple Old Fashioned
  • 2 ounces bourbon (or rye) Choose a quality bourbon for better flavor.
  • 3/4 ounce pineapple simple syrup Homemade is recommended for the best taste.
  • 2 dashes Angostura bitters Classic bitters work best.
  • 1 strip orange peel Squeeze and twist for the oils.
  • 1 optional maraschino cherry Optional garnish.
For the Pineapple Simple Syrup
  • 1 cup sugar Equal parts sugar and water.
  • 1 cup water
  • 1/2 cup chopped fresh pineapple Canned pineapple can be used, but fresh is preferred.

Method
 

Preparation
  1. To make the pineapple simple syrup, combine sugar, water, and chopped pineapple in a saucepan.
  2. Heat until sugar dissolves and pineapple is soft, about 5 minutes.
  3. Remove from heat, let it cool, strain out pineapple chunks, and store the syrup in the fridge.
Mixing the Drink
  1. In a short glass, place a big ice cube.
  2. Pour in 2 ounces of bourbon.
  3. Add 3/4 ounce of homemade pineapple simple syrup.
  4. Add a couple of dashes of Angostura bitters.
  5. Stir for about 20 seconds until well mixed.
  6. Squeeze the strip of orange peel over the drink to release the oils, then drop it in.
  7. Optionally, garnish with a maraschino cherry.

Notes

Homemade pineapple syrup enhances the flavor of the drink. Use a sturdy glass that comfortably holds a big ice cube for the best experience.
