Ingredients
  

Classic Cookie Base
  • 1 cup butter, softened Use real butter for best flavor.
  • 1 cup brown sugar
  • 2 cups all-purpose flour Cake flour can be used for a softer texture.
  • 1 large egg
  • 1 teaspoon vanilla extract Almond extract can be used for variation.
  • 1 teaspoon baking powder
  • 1 teaspoon sea salt For topping.
Mix-ins for Specialty Flavors
  • 1 cup chocolate chips or dark chocolate chunks For chocolate chip cookies.
  • 1 cup crushed Oreos For cookies-and-cream flavor.
  • 1 cup Fruity Pebbles For Fruity Pebbles flavor.
  • 1 cup almond extract frosting For pink sugar cookies topping.

Method
 

Preparation
  1. Preheat the oven to 350°F.
  2. In a large bowl, cream together the softened butter and brown sugar until smooth.
  3. Add in the egg and vanilla extract; mix well.
  4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Baking
  1. Roll the dough into baseball-sized balls and place on a baking sheet.
  2. Flatten them slightly, then bake for 10-12 minutes, or until the edges are just set.
  3. Remove from oven and allow cookies to cool on the baking sheet.
  4. For specialty cookies, mix in desired flavor ingredients before rolling.
Frosting
  1. For pink sugar cookies, whip together butter, powdered sugar, a few drops of food coloring, and almond extract.
  2. Frost cookies as desired.

Notes

Chill the dough before baking to prevent cookies from spreading too much. Overbaking can lead to crunchy cookies. These cookies can also be frozen in portions and baked later.
