  • 3 pieces ripe bananas Use super ripe for extra flavor
  • 1 box yellow cake mix Can substitute with white or spice cake mix
  • 2 pieces large eggs No need to worry about size
  • 1/3 cup oil Vegetable or canola oil works well
Optional Mix-Ins
  • 1/2 cup walnuts Chopped, for additional texture
  • 1/2 cup chocolate chips To add sweetness
  • 1 tsp cinnamon For flavor enhancement

Method
 

Preparation
  1. Preheat oven to 350°F (175°C).
  2. Mash the ripe bananas in a bowl until smooth.
  3. Add the yellow cake mix, eggs, and oil to the mashed bananas and stir until combined.
  4. Pour the batter into a greased loaf pan.
Baking
  1. Bake the loaf for 45-55 minutes, or until a toothpick inserted into the center comes out mostly clean.
  2. Let it cool in the pan for 10-15 minutes before removing and slicing.

Notes

Let the bread cool before slicing to prevent it from falling apart. For added flavor, consider adding a sprinkle of brown sugar on top before baking.
